Peppermint Cocoa Ice Cream


Makes 1 Quart or 6 Zoku Servings

1 ½ cups whole milk
1 ½ cups heavy cream
¾ cup granulated sugar
1 tablespoon vanilla extract
½ teaspoon peppermint extract
2/3 cup cocoa powder
¼ teaspoon kosher salt

chopped peppermint bark
mini dehydrated marshmallows

Whisk together the milk, cream, sugar, extracts, cocoa powder, and salt until the cocoa powder is thoroughly combined. Cover and chill in the refrigerator for 30 minutes. Whisk again to thoroughly blend the cocoa powder into the liquid.

Chill to 40 degrees F (4.5 degrees C), then pour 5 fl. oz./147 ml. into the Zoku Ice Cream Maker and freeze according to instructions.  As the mixture begins to freeze, stir in ¼ cup chopped bark. If desired, top with mini dehydrated marshmallows.
