Banana Soy Ice Cream

Makes 1 Quart or 6 Zoku Servings

1 cup packed sliced banana (about 2 small bananas)
2/3 cup light agave nectar
2 teaspoons banana extract
¼ teaspoon Kosher salt
1 1/2 cups plain soy milk

Puree the banana, light agave nectar, banana extract, salt and ½ cup soy milk in a blender or food processor. Chill ice cream mixture and stir well before using.
