Chocolate Chunk Coconut Ice Cream

Makes 1 Quart or 6 Zoku Servings

INGREDIENTS
2 - 13.6 oz cans of coconut milk 
1 cup turbinado sugar (sugar in the raw)
1 tablespoon spiced rum

ADDITIONS
1/3 cup shredded coconut, toasted
½ cup dark chocolate chips 
¼ cup slivered almonds (optional)

TOPPINGS
high quality hot fudge sauce
toasted coconut

DIRECTIONS
Mix coconut milk, sugar and rum in a blender until smooth. Add shredded coconut, dark chocolate chips and slivered almonds about three-quarters of the way through the freezing process. Top with hot fudge sauce and additional toasted coconut. 

FREEZE
Follow the instructions included with your ice cream maker for churning and freezing.
